"Ornato" Barolo

Ornato Barolo

Grape variety: 100% Nebbiolo

Vineyards: A single vineyards Barolo from very ripe grapes of three different plots of the famous Pio's Family-owned Ornato Estate in Serralunga d'Alba, one of the top vineyards in the whole Barolo area.

Vinification: Fermented in stainless steel with skin contact for 15 days.

Ageing: In mid toasted French oak for 36 months. 70% in new barriques and 30% in a 25 hectoliters casks.

Il Bricco Barbaresco

Grape variety: 100% Nebbiolo

Vineyards: A single vineyard Barbaresco from very ripe grapes of several plots in the famous "Il Bricco" Estate, owned by the Pio Family.

Vinification: Fermented in stainless steel tanks; 15 days of skin contact.

Ageing: This wine ages in French oak for 30 months. 70% of it in new barriques and 30% in a 20 hectoliters casks.

"Fides" Barbera d' Alba

Fides Barbera d'Alba

Grape variety: 100% Barbera

Vineyards: A single vineyard Barbera from the Pio Cesare’s "Colombaro" vineyard near the famous Ornato Estate in Serralunga d'Alba. “ Fides “ is the Latin  for “trust” and “ faith “. A true act of faith and trust was made by the Pio Family when, instead of Nebbiolo, we planted Barbera in a vineyard, where a great Barolo could have been produced instead.

Vinification: Fermentation in  stainless steel tanks. Skin contact for about 10 days.

Ageing: Right after the drawing off the wine rests 20 months in medium toasted French oak casks: 80% in barriques and 20%  in 20hl casks.

Piodilei

Grape variety: 100% Chardonnay

Vineyards: A single vineyard barrel fermented Chardonnay. From the very first Pio Cesare Chardonnay vineyard, planted in 1980, at the "Il Bricco" Estate in Treiso, in the Barbaresco area.

Vinification: Low yields. Fully ripened grapes, late harvested. Fermentation on the lees in new French oak barrels.

Ageing: 10 months on the lees in French oak barrels. Six months of bottle age prior to release.

Grape variety: 100% Nebbiolo

Vineyards: Sourced from family owned vineyards in Serralunga d'Alba (Ornato), Grinzane Cavour (Gustava), La Morra (Roncaglie), Barolo -Novello (Ravera).

Vinification: In stainless steel tanks. Skin contact for about 20 days.

Ageing: In mid toasted French oak for 3 years: 70% in 20 to 50 hectoliters casks; 30% in barriques.

Barbarsco

Grape variety: 100% Nebbiolo

Vineyards:Sourced exclusively from Pio Cesare Family owned vineyards: the famous "Il Bricco" Estate and the great hill of San Stefanetto, both located in the village of Treiso.

Vinification: Fermented in temperature controlled stainless steel tanks. Skin contact for 20 days.

Ageing: 35% of the wine is aged in French oak barriques (one third new) for 30 months. The remaining 65% spends 3 years in French oak casks, 20 to 50 hectoliters each.

Vineyards:Sourced from family-owned vineyards in Diano d’Alba, La Morra and in small portions even from the classic Barolo area, together with other exclusive vineyards, belonging to “historical suppliers” who have been selling their grapes to Pio Cesare from generations and who work their vineyards according to Pio Cesare direction and strict quality control.

Vinification:Temperature-controlled stainless steel fermentation. 12 days of skin contact.

Ageing: 30 months in French oak: 20% in barriques and 80% in casks of 20 to 50 hectoliters each.

Il Nebbio

Grape variety: 100% Nebbiolo

Vineyards:The name Il Nebbio comes from the world Nebbiolo. It expresses the fragrant, youth and freshness side of this great grape variety's character. The wine is sourced from a selection of Pio's Family owned vineyards in Serralunga, Treiso and Diano d'Alba, early harvested.

Vinification:The grapes undergo through a short carbonic maceration. They are fermented in stainless steel tanks at low temperatures, with a limited skin contact time.

Ageing:The wine is kept in stainless steel tanks and bottled in March, following the harvest, There is no wood age.

Grape variety: 100% Barbera

Vineyards:Family owned vineyards in Serraluga d’Alba (Ornato and Colombaro), in Sinio, Diano d'Alba and Grinzane Cavour together with other vineyards belonging to “historical suppliers” who have been selling their grapes to PIO CESARE for generations, working their vineyards according to our directions and strict quality controls.

Vinification:15 days of skin contact in stainless steel temperature controlled fermenters.

Ageing: 18 months in French oak. 30% in mid toasted barriques and 70% in 20 to 50 hectoliters casks.

Dolcetto d'Alba

Grape variety: 100% Dolcetto

Vineyards:Sourced from family-owned vineyards  in Serralunga d’Alba (The Ornato Estate ), in Grinzane Cavour (Cascina Gustava)  in Treiso ( Il Bricco Estate) along with exclusive vineyards  belonging to “historical suppliers” who have been selling their grapes to PIO CESARE for generations and  who work their vineyards according to our directions and strict quality controls.

Vinification: Stainless steel fermentation  at rather cool temperature.

Ageing: In stainless steel tanks until the bottling time which is usually in March after the harvest.

Grape variety: 100% Grignolino

Vineyards: Sourced from exclusive vineyards in prominent positions on the hills near Rosignano Monferrato.

Vinification: Fermentation takes place at low temperature in stainless steel tanks. From six to eight days of skin contact.

Ageing: The wine is aged in stainless steel tanks until bottling takes place, usually in March following the harvest.

Langhe Fresia

Grape variety: 100% Freisa

Vineyards:Sourced from selected vineyards located on the hills of Barbresco and Serralunga d'Alba, belonging to” historical suppliers “ of the Pio Family.

Vinification: Temperature controlled fermentation in stainless steel tanks with short skin contact.

Ageing: In stainless steel tanks until April after the harvest, when bottling is made.

Grape variety: 100% Cortese

Vineyards: Sourced exclusively on hillside vineyards in very selected locations of the Gavi area, belonging to families who have been producing their grapes for Pio Cesare for generations and who have worked their vineyards according to Pio's strict quality controls.

Vinification: Slow fermentation at low temperature in stainless tanks on the lees for four months.

Ageing: The wine is kept on stainless steel tanks at low temperatures until March after the harvest when it is bottled.

Langhe Arneis

Grape variety: 100% Arneis

Vineyards: Sourced from very select vineyards in the hills of Barolo and Barbaresco. 

Vinification: Fermentation takes place at low temperature in stainless steel fermenters with extensive lees contact.

Ageing: In stainless steel until bottling is made in March after the harvest.

"L'Altro" Chardonnay

Grape variety: 100% Chardonnay

Vineyards: Sourced from family-owned vineyards in Treiso (Il Bricco Estate), in Serralunga d'Alba (colombaro) and in Trezzo Tinella (Bossania).

Vinification: 75% is fermented in stainless steel tanks and the remaining 25% in new French oak barriques.

Ageing: The wine is kept on its fermentation lees for 5 months, prior to the bottling, late in March after the harvest.

Technical Notes

Moscato d' Asti

Grape variety: 100% Moscato

Vineyards: From old vines in selected vineyards in Treiso and in Trezzo Tinella.

Vinification: The grapes are softly pressed: the free run juice undergo partial cold fermentation in stainless steel tanks, under pressure.

Ageing: After the partial fermentation, the wine is immediately bottled.
